Super Greens Soup with Chickpeas
Ingredients
  • 8 oz. broccoli
  • 1 medium onion, roughly chopped (2 cups)
  • 2 medium potatoes, cut into ½-inch dice (2 cups)
  • 3 cloves garlic, minced
  • 4 cups chopped fresh Swiss chard, with stems
  • 4 cups chopped fresh collard greens, stems removed
  • 4 cups chopped fresh spinach
  • 1 (15-oz.) can chickpeas, rinsed and drained (1½ cups)
  • 3 tablespoons lemon juice, divided
  • 2 tablespoons finely chopped fresh dill, divided
  • ⅛ teaspoon freshly ground black pepper
  • Sea salt, to taste
  • 2 tablespoons tahini
  • ½ cup pomegranate seeds
  • ½ cup fresh or frozen green peas
