Daufuskie Shrimp

Ingredients
  • 2 lbs unpeeled, medium shrimp
  • 7 bacon slices, chopped
  • 2 medium onions, diced
  • 1 large green bell pepper, diced
  • 3 jalapeno peppers, seeded and minced
  • 4 garlic cloves, minced
  • 2 (28-oz) cans diced tomatoes
  • ¼ cup cocktail sauce
  • ½ tsp salt
  • ⅛ tsp pepper
  • Hot cooked grits
Steps
  1. PEEL shrimp
  2. COOK bacon in a large skillet until crisp; remove bacon, drain on paper towel, reserving 3 tbs drippings in skillet
  3. SAUTE onion, bell pepper, jalapenos and garlic  in drippings
  4. STIR in tomatoes and next three ingredients. Reduce heat and simmer 1 hour.  Stir in shrimp and cook 5 mins.  Serve over hot grits.
