Grilled Bacon Wrapped Pork Medallions

Ingredients
  • 1 pork tenderloin
  • 4 strips thick cut bacon
  • 8 tbsp brown sugar
  • 3 tbsp kosher salt
  • 1 tbsp chili powder
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
Steps
  1. Mix seasonings together
  2. On cutting board, lay out 4 strips of bacon leaving about 8 inches gap between bacon. Trim off skinny tail end & add it to make a thicker part.
  3. Roll bacon over tenderloin then cut between bacon.
  4. Lay flat & smash the meat to make it be the same thickness as the bacon. Now use a toothpick to keep the bacon attached to the meat.
  5. Coat in spices
  6. Place on grill about 20 min flipping about every 5 minutes.
