Creamy Vegan Pesto Gnocchi
Ingredients
  • ¾ cup unsweetened soy milk
  • 2 tbsp extra virgin olive oil
  • 1 tsp cornstarch
  • 1, 16 oz package of vegan gnocchi
  • 2 cloves of garlic, crushed
  • ¼ cup sun-dried tomatoes, packed in oil and diced
  • 1, 15 oz can cannellini beans, rinsed and drained
  • ¼ cup of vegan pesto
  • Salt to taste
