Raisin Cookies
from Grandma Roberts
Ingredients
  • ½ cup Crisco
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 egg, beaten
  • ½ Cup milk
  • 3 cups flour
  • 3 tsp baking powder
Steps
  1. cream crisco and sugar
  2. Add vanilla & egg
  3. Combine dry ingredients and add to mixture alternately with milk.
  4. Filling;
  5. ¾ Cup sugar
  6. 1 cup raisins
  7. ¼ tsp salt
  8. 1 cup water
  9. 3 Tab flour
  10. ½ Cup walnuts, chopped (optional)
  11. Combine ingredients in a pot and bring to a boil.
  12. Lower heat and simmer making sure sugar dissolves and mixture begins to thickens.
  13. Remove from heat and cool.
  14. To make cookies;
  15. Roll out dough and cut out circles.
  16. Put 1 tsp of filling on to center of circle.
  17. Cover with second circle.
  18. Press edge with fork to seal.
  19. {alternative method - use one circle of dough and fold in half to seal}
  20. Bake at 350 degrees for 12 + minutes or until around edges.
Notes
  • I have no instructions for venting the tops of cookies.
