Ingredients
- subheading: For the meatballs:
- 1 lb ground beef
- 1 cup chopped Italian parsley
- 1 cup finely chopped yellow onion
- 1 tsp kosher salt
- ¼ tsp ground black pepper
- 2 slices of bread (like challah or ciabatta), crusts removed, soaked in water
- subheading: For the sauce:
- ¼ cup olive oil
- 1 yellow onion, diced
- ¼ cup tomato paste
- 1 Tbsp dried mint or ¼ cup chopped fresh mint
- ¼ tsp ground cardamom
- 1 Tbsp sugar (see notes)
- 1 ½ tsp salt
- ⅛ tsp white pepper
- 1 ½ cups water, at room temperature
- 3 Tbsp lemon juice
- 1 tsp paprika
- 1 cup (4 oz.) unsweetened dried apricot (see notes)
- ¼ cup golden raisins (optional, I do not use)
