  • 1 (14 ounce) jar artichoke hearts, drained and halved
  • ⅔ cup coarsely-grated Parmesan cheese, plus extra for serving
  • ½ cup toasted pine nuts

  • ¼ cup freshly-squeezed lemon juice
  • ¼ cup olive oil
  • ¼ cup roughly-chopped fresh basil leaves
  • 1 teaspoon Dijon mustard
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly-cracked black pepper
