Ingredients
  • 6 slices thick cut bacon, cut into ¾" pieces
  • 1 c. onion, chopped
  • 1-½ c. sharp cheddar cheese, grated
  • 8 oz. frozen broccoli florets, thawed
  • 12 eggs
  • ½ c. heavy cream
  • ½ t. sea salt
  • ½ t. pepper
Steps
  1. In a large skillet, fry the bacon pieces until most of the fat has been rendered. Skim off all but about 2 Tablespoons of bacon fat and save for another use.
  2. Add onion to the pan and cook in the remaining fat along with the bacon pieces until onion is translucent 3 to 4 minutes.
  3. Place cooked bacon and onion mixture into the bottom of a greased 9 x 13 pan.
  4. Sprinkle cheese on top of the bacon mixture.
  5. Place thawed broccoli florets on top of the cheese.
  6. In a large bowl, whisk together the eggs, cream, salt and pepper.
  7. Pour egg mixture over the broccoli, cheese and bacon making sure to cover all the ingredients in the pan.
  8. Bake at 350 for 30 to 35 minutes. Cool. Can be wrapped in individual servings and frozen.
