Savory Mushroom and Parmesan Palmiers
Ingredients

  • 1 sprig rosemary

  • 3 sprigs tarragon
  • ⅔ cup dry white wine
  • ¼ cup Marsala wine
  • 6 tablespoons unsalted butter
  • ½ cup panko (Japanese breadcrumbs) or plain coarse breadcrumbs
  • ½ cup grated Parmesan (2 ounces)
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons freshly ground black pepper
  • All-purpose flour, for rolling
  • 12 ounces all-butter puff pastry, frozen and thawed
  • Flaky sea salt, for sprinkling
