Pea Soup with Basil and Mint Crema
Ingredients
  • 2 tablespoons unsalted butter

  • 1 cup chopped white onion
  • 2 cups thinly sliced leeks white and light green parts only
  • 6 cups chicken broth
  • 4 cups fresh peas or thawed from frozen
  • 1 cup fresh mint leaves packed, reserve ¼ cup finely chopped for cream garnish
  • 1 cup fresh basil leaves packed, reserve ¼ cup finely chopped for cream garnish
  • 1 teaspoon kosher or coarse sea salt plus ¼ teaspoon for garnish cream
  • ½ teaspoon ground black pepper plus ¼ teaspoon for garnish cream
  • 1 cup Mexican crema or creme fraiche
