Spiced Roasted Cauliflower & Chickpea Salad
Ingredients
  • 1½ cups chickpeas (cooked)
  • ½ head cauliflower (diced in florets)
  • 2 carrots (peeled and chopped in bite size)
  • 1 tsp lemon myrtle (can be subbed with sumac)
  • 1 tsp sweet paprika
  • ½ tsp ground ginger
  • ¼ tsp ground cardamom
  • 1 tbsp olive oil
  • 3 cups mesclun
  • 1 avocado (sliced)
  • ½ cup mint (finely chopped)
  • 1 shallot (finely chopped)
  • ¼ cup pomegranate seeds
  • 10 roasted almonds (chopped)
  • subheading: Dressing:
  • 2 tbsp orange juice
  • 1 tsp orange zest
  • 2 tsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp wholegrain mustard
