Meera Sodha Vegetarian Samosa Recipe with Leek Pea & Mint
use to stuff halved jacket potatoes instead of filo
Ingredients
  • 750g trimmed leeks
  • 2 tbsp rapeseed oil
  • 1 tbsp unsalted butter
  • 1 tsp black mustard seeds
  • 1 large white onion, finely sliced
  • 4 cm ginger, peeled and grated
  • 200g peas (fresh or defrosted)
  • 1 ½ tsp garam masala
  • ¾ tsp ground cumin
  • ¾ tsp chilli powder
  • ½ tsp ground turmeric
  • 1 ¼ tsp salt
  • 1 tbsp lemon juice
  • 10g fresh mint leaves
  • 1 to 1 ¼ x 270g packs of filo pastry (each pack makes 18 samosas)
  • 100g unsalted butter, melted
  • optional: nigella or cumin seeds, to decorate
