Keto Protein Snickerdoodle

Ingredients
  • subheading: For the cookies:
  • 1 ⅓ cup (128g) fine almond flour
  • ⅔ cup (60g) Quest protein powder (Cinnamon Crunch & Multi-Purpose Mixed)
  • ½ cup + 2TB butter, softened
  • 1 egg
  • ¾ cup granulated sweetener
  • ½ tsp baking soda
  • pinch of salt
  •  
  • subheading: For the coating:
  • 2 Tbsp granulated sweetener
  • 2 tsp ground cinnamon
Steps
  1. Preheat oven to 325 degrees (F)
  2. Mix butter, almond flour, baking soda, granulated sugar in a medium sized bowl.
  3. Mix in Protein Powder and egg.
  4. Mix until a stiffish dough forms.
  5. Roll the dough into 20 balls of equal size
  6. Combine the coating mixture of cinnamon and sweetener in a small dish.
  7. Roll the balls in the mixture until well coated.
  8. Place on a parchment lined cookie sheet and squish slightly with the bottom of a glass.
  9. Bake for 12 minutes.
  10. Cool slightly before serving.
