  • 1 pound andouille sausage sliced into rounds
  • 2 boneless and skinless chicken breasts cut into 1 inch cubes
  • 1 medium sweet onion diced

  • 1 red bell pepper cored and chopped into 1 inch chunks
  • 1 green bell pepper cored and chopped into 1 inch chunks
  • 2 ribs celery diced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon ground paprika
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt or to taste
  • 1 ½ cups long grain white rice uncooked
  • 1 14oz can diced tomatoes
  • 2 tablespoons hot sauce optional
  • 3 cups low sodium chicken broth more if needed
  • 1 pound raw large shrimp peeled and deveined
  • Chopped fresh parsley for garnish
