Thomasina Miers: Smoked mackerel caesar salad with fried croutons
Ingredients
  • 2 thick slices sourdough, cut into 3cm cubes
  • 3 to 4 tbsp extra-virgin olive oil
  • ½ tsp smoked paprika
  • 2 tbsp capers, drained and dried on kitchen paper
  • 2 large cos lettuces
  • 270g smoked mackerel fillets
  • 70g grana padano or parmesan, finely grated
  • subheading: For the dressing:
  • 2 egg yolks
  • Juice of ½ lemon
  • 2 tsp red-wine vinegar
  • 1 tsp dijon mustard
  • 6 anchovy fillets, drained and chopped
  • 2 small garlic cloves, peeled and crushed
  • Salt and black pepper
  • 100ml olive oil
  • 100ml vegetable oil
