Mexican Impossible Muffins
Ingredients
  • 300g (2 cups) self-raising flour
  • 2 tsp taco seasoning
  • 2 eggs
  • 185ml (¾ cup) milk
  • 125ml (½ cup) extra virgin olive oil
  • 420g can Heinz Chilli Beanz Medium
  • 120g (½ cups) coarsely grated cheddar
  • 125g can corn kernels, drained
  • 2 green shallots, thinly sliced, plus extra, to serve
