Lemon Pound Cake
Ingredients

  • ½ cup vegan margarine plus more for greasing pan, room temperature (I used Earth Balance)*
  • 1 cup vegan granulated sugar
  • 2 Tbsp ground flax seed
  • ½ cup + 2 Tbsp almond milk
  • 6 Tbsp aquafaba*
  • zest of 1 lemon, finely grated*
  • 3 Tbsp fresh lemon juice (about 1 lemon’s worth)
  • 1 ¾ cups organic all-purpose flour, plus more for the pan (I used Bob’s Red Mill)
  • ½ tsp salt
  • 1 ½ tsp baking powder
  • 1/16 tsp turmeric (for color), optional

  • 1 cup vegan powdered sugar
  • 2 Tbsp fresh squeezed lemon juice
