Potato Doughnuts

Ingredients
  • 1 cup mashed potatoes (plain!)
  • 1 cup sugar
  • 2 TBSP melted shortening
  • 2 eggs, well beaten
  • 1 TSP vanilla
  • ½ cup evaporated milk
  • ½ cup water
  • ½ TSP salt
  • 4 TSP baking powder
  • ½ TSP nutmeg
  • Flour
Steps
  1. Combine mashed potatoes, sugar, shortening, eggs, milk, water, and vanilla. Sift flour and measure 1 cup. Sift with salt, baking powder, and nutmeg. Mix thoroughly. Add enough flour to make a soft dough. Turn onto a lightly floured board. Roll into sheet that is ¼ inch thick and cut doughnuts out with floured cutter. Fry in deep, hot fat (365F) for about 2 minutes or until well browned. Drain on paper and top with favorite toppings. 40 to 45 servings (depends on the size of your cutter).
