Ingredients
  • 2 chicken breasts boneless and skinless, cut into strips (around 1 pound/450g) (use thighs)
  • 1 red bell pepper sliced into ½ inch slices
  • 1 yellow bell pepper sliced into ½ inch slices
  • 1 green bell pepper sliced into ½ inch slices
  • 1 red onion sliced into wedges
  • 3 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil

  • 3 to 4 peppers from Aldi
  • 2 zucchini sliced and then cut halfway into semicircles
  • 1 to 2 pack mushrooms (good juicy flavor)
  • ½ to 1 red onion
  • Bake probably 20 to 25 minutes at 390 to 400F
  • Onions need a 5 minute head start, mushrooms need to go in at the last 5 minutes.
