Lemon Strawberry Tart

  • LEMON STRAWBERRY TART Who doesn't like lemon desserts? I'm a huge fan of them! I have tried different lemon tart recipes and I finally came up with this simple and delicious one. It is so refreshing that everyone loved it! I hope you like it too! Are you preparing any dessert for the last night of the year? I'd love to hear your ideas! Have a wonderful day! INGREDIENTS FOR THE BASE: ½ cup raw almonds ¼ cup cashews 3 dates, pitted and chopped 1 tsp maple syrup ½ tsp coconut oil, melted ¼ tsp vanilla extract Pinch of salt INGREDIENTS FOR THE FILLING: 1 cup ¼ cup cashews, soaked for 6h ½ cup almond milk ½ cup lemon juice 1 tsp lemon zest 2 Tbsp maple syrup 2 Tbsp coconut oil, melted Pinch of salt METHOD: 1.In a food processor pulse the nuts and the chopped dates together until broken down and combined. 2.Add the maple syrup, coconut oil, vanilla extract, and salt and process a few times to form the dough. 3.Line the tart pan with plastic wrap and press to form an even layer. 4.Place into the freezer for 30 min until firm. 5.To prepare the filling, rinse the cashews and drain them well. 6.Blend all ingredients together (except coconut oil) in a high-speed blender until perfectly smooth. *Feel free to adjust the ingredients (adding more lemon juice if you want a stronger lemon flavor for example) 7.Stream the melted coconut oil into the mixture. 8.Pour the filling over the crust and place it again in the freezer for at least 3 hours. 9.Allow the cake to defrost before serving and decorate with strawberry halves 10.Enjoy!
