Herb Twice Baked Potatoes
Ingredients
  • 4 large russet potatoes (about 8 to 10 ounces each)
  • 2 tablespoons olive oil
  • 1 tablespoon Kosher salt
  • ½ cup goat cheese (room temperature)
  • ½ cup gruyere cheese (shredded)
  • 1 stick unsalted butter (room temperature)
  • 2 tablespoons sour cream
  • 1 large egg (lightly beaten)
  • 1 garlic clove (peeled, minced)
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons parsley (chopped)
  • 1 lemon (zested)
  • 2 tablespoons chives (sliced, to garnish)
  • Kosher salt and freshly ground black pepper (to taste)
