Eggplant in Garlic Sauce
Ingredients
  • 2 (400 grams in total) Chinese eggplant, chopped
  • 1 teaspoon minced ginger
  • 5 cloves garlic, chopped
  • ¼ teaspoon salt
  • 1 teaspoon cornstarch, plus more to coat the eggplant
  • 1 tablespoon light soy sauce
  • ½ teaspoon dark soy sauce (*see footnote)
  • 2 teaspoons sugar
  • 2 and ½ tablespoons peanut oil (or vegetable oil)
