Creamy Mushroom and Bacon Fettuccine
Ingredients

  • 300 g ( 10 ½ oz) fettuccine (see note 1, can be substituted with any pasta of choice)
  • 1 tbsp olive oil
  • 200 g ( 7 oz) bacon, cut into thick strips
  • 1 small red onion, finely diced
  • 400 g ( 14 oz) mushrooms (sliced white button or Swiss brown mushrooms, or small whole mushrooms)
  • 1 tbsp freshly minced garlic
  • 2 thyme sprigs, plus a few extra leaves to garnish (optional)
  • ½ cup ( 125 ml) chicken stock
  • 300 ml (10 fl oz) thick (double/heavy) cream
  • ½ tsp salt, or to taste
  • ½ cup ( 50 g) freshly grated parmesan, to serve
  • Cracked black pepper, to serve
