Curried Lemon Ginger Chicken
Ingredients
  • 1 tbsp (15 mL) canola oil
  • 8 skinless bone in chicken thighs (about 2 lb/1 kg) or cut up whole chicken
  • 2 tbsp (25 mL) minced fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp (5 mL) each turmeric and ground cumin
  • ½ tsp (2 mL) ground coriander
  • ¼ tsp (1 mL) cayenne or hot pepper flakes
  • ½ cup (125 mL) chopped fresh cilantro, divided (optional)
  • 2 cup (250 mL) sodium reduced chicken or vegetable broth
  • 2 tbsp (25 mL) lemon juice
  •  
  • 2 tbsp cornstarch and cold water ro thicken juices once cooked.
