Warm Spinach Potato Salad with Bacon Vinaigrette
Ingredients
  • 1 ½ lb fingerling potatoes, scrubbed and trimmed
  • 6 slices bacon, sliced crosswise into ¼” strips
  • 1 large shallot, thinly sliced
  • 2 medium garlic cloves, thinly sliced
  • ¼ c apple cider vinegar
  • 2 T whole grain mustard
  • 2 t granulated sugar
  • 1 t sea salt, plus more as needed
  • freshly ground black pepper
  • 4 c baby spinach, large stems removed
  • 2 T chopped, ftesh herbs such as flat-leaf parsley, chives, dill, etc
