Cornbread and Sausage Dressing

  • 2 carrots, peeled and very finely diced
  • 1 large onion, diced
  • 4 cups low-sodium chicken or turkey stock, plus more if needed
  • ½ teaspoon ground thyme
  • ¼ teaspoon ground sage
  • Pinch of turmeric
  • Kosher salt
  • ¼ cup fresh parsley, chopped
