Ingredients
  • 4 boneless, skinless chicken breasts (6 to 8 ounces each)
  • Kosher salt, freshly ground black pepper and cayenne pepper
  • 1 cup all-purpose flour, plus more for “gluing” the chicken
  • 4 large eggs
  • 1 cup plain dried bread crumbs
  • 1 cup panko bread crumbs
  • 1 cup shredded whole-milk mozzarella cheese (4 ounces)
  • Canola or vegetable oil, for shallow frying
  • 3 cups baby arugula
  • 1 cup cherry tomatoes, halved or quartered
  • A chunk of Parmigiano-Reggiano cheese
  • Extra-virgin olive oil (the best you have)
  • Good-quality balsamic vinegar
