Asian Inspired Beef Stir Fry

Ingredients
  • 1 lb beef
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 red bell pepper
  • ½ large onion
  • ½ poblano pepper (optional)
  • 1 tbsp of fresh ginger (optional)
  • 2 tbsp soy sauce
  • 2 tsp rice vinegar (or apple cider vinegar, closest match to rice vinegar)
  • ½ tsp brown sugar
  • dissolve 1 tbsp of cornstarch into ¼ cup of water
  • subheading: Marinade:
  • 2 tbsp soy sauce
  • ½ tsp black pepper
  • 1 egg
  • 1 tbsp cornstarch
Steps
  1. cut beef into thin strips
  2. add 2 tbsp of soy sauce, black pepper, and egg to beef, stir to combine
  3. add cornstarch, mix, and set aside for 5 minutes to marinate
  4. fry marinated beef in olive oil until cooked through, and remove from pan
  5. cut red bell pepper into thin strips and add to pan with more olive oil if needed
  6. fry for 2 minutes over medium heat
  7. slice ½ onion up and add to bell peppers, fry for another 2 minutes
  8. add beef back to pan
  9. add 2 tbsp of soy sauce, rice vinegar (or ACV), brown sugar, black pepper, and cornstarch dissolved in water to beef and veggies, stir to combine
  10. add 2 cloves of garlic, ginger, and poblano pepper, minced (optional)
  11. serve with rice (optional)
