Ingredients
  • 1 butternut squash, cut into 1" squares
  • 1 sweet potato, cut into 1" squares
  • 1 small pkg baby carrots
  • 2 T. Oil
  • Salt & pepper
  • 1 can pumpkin puree
  • 2 c. chicken or vegetable stock
Steps
  1. Toss carrots, squash, and sweet potato in oil, add salt and pepper. Roast on a foil lined baking sheet at 350 degrees for 1 hr. Add pumpkin puree and stock. Blend all together.
