Peppermint Bark
Ingredients
  • 2 - 12 oz. bags semi-sweet (or dark) chocolate chips (or bar)
  • 2 - 12 oz. bags white chocolate chips (or bar)
  • 1 teaspoon peppermint extract
  • 16 candy canes
Steps
  1. Prepare a baking sheet with parchment.
  2. Boil 3 inches of water in a pot but turn down to medium low when at full boil. Put heat proof bowl with chocolate chips on top of water. Stir occasionally until melted
  3. Add 1 tsp of peppermint extract and stir to combine. Spread mixture onto parchment with an offset spatula, edge to edge. Chill for 20 (+) minutes.
  4. Meanwhile crush candy canes in a zip top bag.
  5. When chocolate is hardened, repeat melting of white chips in double boiler (no peppermint) and spreading on top of dark chocolate
  6. Immediately add crushed canes and press into white chocolate layer.
  7. Chill until hardened.
Notes
  • You will need a double-boiler. A pot with a heat proof bowl that can balance on top works. Make sure the bowl doesn’t sit in the water.
