Vegan Smashed Edamame & Mint Burgers
Ingredients

  • 1large brown onion, peeled and chopped
  • 1large mild green chilli
  • 2tbsp chia seeds
  • 30g raw spinach
  • 75g edamame
  • 50g rolled oats
  • small bunch of fresh mint leaves
  • small bunch of fresh chives
  • small bunch of fresh parsley
  • sea salt and black pepper, to taste
  • subheading: To serve:
  • wasabi mayo
  • sliced onion
  • spinach
  • sliced avocado
  • pickles
