Instant Pot Baked Beans
Ingredients
  • 16 oz navy beans, dry
  • 3 cups vegetable broth
  • 3 cups water
  • 10 to 12 oz salt pork, diced
  • ½ medium yellow onion, diced
  • ¾ cup ketchup
  • ½ cup brown sugar, packed
  • ⅓ cup molasses
  • 1 tsp. salt, divided
  • 1and ½ tsp dry ground mustard
  • 1 tbsp smoked paprika
Steps
  1. Rinse beans and add to Instant Pot inner pot.
  2. Dice onion and salt pork and add to beans. Add in water, ½ tsp salt, vegetable broth, and chicken broth. Stir.
  3. Place lid on pot, seal valve, and set to Manual for 45 minutes.
  4. Allow to NPR. Remove lid carefully and then drain beans, reserving 1 cup liquid from beans.
  5. Return beans to Instant Pot. Add reserved liquid, molasses, ketchup, brown sugar, ½ tsp salt, dry ground mustard, and smoked paprika. Stir gently until well blended.
  6. Place lid back on pot. Set for manual pressure for 15 minutes.
  7. Allow for NPR or do a quick release. Remove lid carefully. Stir.
  8. If you want a thicker sauce set to Saute on More setting for 5 to 6 minutes. Allow to sit for 10 minutes and sauce will thicken.
