Easy Prawn and Red Grapefruit Salad with Almonds
Ingredients
  • 2 pink or red grapefruit (1 for zest and juice, 1 to slice into segments)
  • 300 g cooked prawns (peeled, deveined, tails on)
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons fresh dill, finely chopped
  • 1 Tablespoon white wine vinegar
  • 1 teaspoon white sugar
  • 100 g mixed lettuce or green salad leaves
  • 1 Lebanese cucumber, deseeded and diced
  • 2 green onions (green shallots), finely sliced
  • 2 Tablespoons slivered almonds
