White Chicken Enchiladas
Ingredients
  • 10 soft tacos
  • 2 cups cooked shredded chicken
  • 2 cups shredded Monterey Jack cheese
  • 3 T butter
  • 3 T flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1- 4 oz can green chilies
Steps
  1. Preheat oven to 350 F
  2. Mix chicken and 1 cup cheese, place on tortillas and roll up and place in pan
  3. In a med saucepan, add butter, melt and add flour, stir around to cook, add broth, whisk till smooth.  Stir and cook till creamy.
  4. Add sour cream and chilies and immediately pour over enchiladas. Top with remaining cheese.
  5. Bake for 22 min, run under broiler for 3 min to brown top of casserole.
