For tahini, lightly toast 1 cup sesame seeds, then pulse in vitamix with 1 Tbs. of olive oil. Can freeze leftovers.

  • 1 ripe avocado, halved and pitted
  • 1 cup fresh cilantro leaves
  • ¼ cup tahini
  • ¼ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 1 clove garlic
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
