Sheet Pan Gnocchi and Veggies
Ingredients
  • 16 ounces gnocchi - shelf stable, dry (uncooked)
  • 1 pint cherry tomatoes
  • 1 can of corn, drained and rinsed
  • 1 can of chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • ½ teaspoon salt
  • ½ teaspoon cracked black pepper
  • ¼ teapsoon crushed red pepper flakes
  • fresh herbs and/or greens - such as dill, basil, oregano, cilantro, arugula, spinach, kale, (optional)
  • your favorite vinegarette dressing (ex: Italian, Greek, Garlic and Herb)
