Coconut Honey Lime Filipino Chicken Adobo Skewers

  • juice of 2 limes
  • ¼ cup rice vinegar
  • ¼ cup honey
  • 4 cloves garlic minced or grated
  • 3 leaves bay
  • 2 teaspoons fresh ginger grated
  • ½ teaspoon black peppercorns
  • coconut rice for serving
