Creamy Mushroom Barley Soup with Kale
Ingredients
  • subheading: Soup Ingredients:
  • 1 onion diced
  • 1 to 2 bay leaves (depending on size)
  • 3 to 4 cloves garlic minced or pressed
  • 1 cup celery chopped (cut lengthwise once, and then sliced in ¼" ribs about 3 large stalks
  • 1 cup carrots chopped into ¼" pieces
  • 3 cups chopped mushrooms of your choice I used baby bella
  • ½ tsp thyme (dried or fresh)
  • 1 tsp rosemary (dried or fresb)
  • 2 tsp italian seasoning
  • 1 tsp mushroom seasoning or powder I used Trader Joes
  • ½ cup pearl barley
  • 4 ½ cups water Can use equal amount of Vegetable broth if not using bouillon
  • 4 tsp Better than Bouillon (or amount your bouillon packaging says per cup of liquid times 4)
  • 2 cups chopped kale loosely packed
  • Salt and Pepper to taste
  • subheading: Cashew Cream:
  • ⅓ cup cashews (soaked in boiled water for at least 20 min)
  • 1 cup finished soup from the pot
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • ⅓ cup water
  • handful of fresh chopped parsley (optional)
