  • ¼ cup of chicken stock
  • 1 jalapeno pepper optional
  • salt and pepper to taste
  • subheading: For the Enchiladas:
  • 12 Corn Tortillas
  • 1 Cup Grated Mozzarella Cheese
  • Cilantro and Onion chopped
