Asian Vegetable Rice-Paper Rolls with Citrus Chilli Sauce
Ingredients
  • avocado 1 large, quartered then thickly sliced
  • lemon ½, juice
  • rice papers 1 pack 22cm-diameter
  • mint large bunch, leaves only
  • carrots 3 medium, trimmed then julienned
  • red capsicums 1½ large, julienned
  • telegraph cucumber 1, julienned
  • spring onions 3, trimmed then julienned
  • cashews ½ cup, lightly salted (I used Native Cashews from East Bali Cashews)
  • coriander large bunch, leaves only
  • subheading: Citrus chilli dipping sauce:
  • ginger ½ teaspoon, finely grated
  • oranges 2, juice
  • lime ½, juice
  • sweet chilli sauce 1 tablespoon (check label if eating gluten free)
  • fish sauce 1 teaspoon (check label if eating gluten free, omit for vegan)
  • sesame oil ¼ teaspoon
  • soy sauce ¼ teaspoon (check label if eating gluten free)
  • sesame seeds ½ teaspoon
  • red chilli ½, finely sliced
