  • 1 tbsp. fish sauce;
  • 1 tsp. lime zest;
  • Fresh minced herbs, such as cilantro or basil;
  • Lime wedges (for serving);
  • 2 tbsp. cooking fat;
  • Sea salt and freshly ground black pepper to taste;
