Lightened-Up Sweet Potato Casserole
Ingredients
  • SWEET POTATO LAYER
  • (Can be made in advance)
  • 2 pounds sweet potatoes, peeled and cubed
  • 3 thick pats butter
  • ½ cup water
  • 1 tablespoons maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  •  
  • OATMEAL COCONUT PECAN CRUMBLE (can be made in advance and put in fridge separate from potato layer)
  • 1 cup whole, unsalted pecans, chopped
  • 3 tablespoons brown sugar (used brown coconut sugar instead)
  • ½ cup unsweetened, flaked coconut
  • 2 tablespoon whole wheat pastry flour (I used oat flour)
  • ½ cup old-fashioned oats
  • 1 teaspoon cinnamon
  • 2 pinch of nutmeg
  • 2 pinch of salt
  • 4 tablespoons butter, softened
