Healthy Burrito Bowl (Kelli's recipe)
Ingredients
  • 1 pound boneless, skinless chicken thighs
  • 1 cup cooked quinoa
  • ½ tsp ground cumin
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp chipotle paste
  • 1 cup prepared mild salsa
  • 2 ears corn or 1 cup of corn
  • 1 lime, juiced
  • 4 lime wedges
  • ½ Tbsp olive oil
  • 2 Tbsp + 2 Tbsp chopped cilantro
  • 1 cup halved cherry tomatoes
  • 1 small haas avocado, sliced
