Veggie Phyllo “Pizza”
Ingredients
  • 6 tablespoons olive oil, divided
  • Twelve (14-by-18-inch) phyllo sheets, defrosted (see Make ahead)
  • 1 cup (4 ounces) shredded mozzarella cheese
  • ½ cup (2 ounces) crumbled feta cheese
  • ½ large green bell pepper, seeded and finely chopped (about 1 cup)
  • 2 scallions, trimmed and thinly sliced
  • 1 cup (4 ounces) grape tomatoes or cherry tomatoes, halved if small and quartered if large
  • ⅓ cup pitted kalamata olives, chopped
  • ⅓ cup chopped fresh flat-leaf parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes
  • Fine salt (optional)
  • Freshly ground black pepper (optional)
