Pumpkin Souffle
A full lunch!
Protein - eggs and pecans
Vegetable - pumpkin (10/10 split lunch/dinner)
Fruit - banana
Fat - butter / ghee

Ingredients
  • 10 oz pumpkin
  • 6 oz banana
  • 2 small eggs
  • 0.5 oz pecans
  • 0.5 oz butter (softened / melted) or ghee
  • 1 tsp pumpkin pie spice
Steps
  1. Preheat oven to 350 deg F.
  2. In a bowl, whisk eggs.
  3. Add all other ingredients except pecans - blend mixture.
  4. Put mixture in glass container.
  5. Bake for 50 minutes.
  6. Add pecans to top of souffle.
  7. Enjoy!
Notes
  • Only eat half of this souffle if you also want some turkey and other fixings for Thanksgiving!
