This Chocolatey Spin On Pecan Pie Is Our Favorite Riff Yet
Ingredients
  • Old-fashioned flaky pie dough
  • 5 tablespoons unsalted butter, melted (2.5 ounces; 70g)
  • ⅓ cup light corn syrup (4 ounces; 115g)
  • ⅓ cup packed dark brown sugar (2.2 ounces; 62g), see note
  • 1 ½ teaspoons vanilla extract
  • ¼ cup all-purpose flour (1.2 ounces; 32g)
  • 2 large egg yolks (1 ounce; 30g) plus 1 large egg, divided
  • 1 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
  • 1 cup pecans, roughly chopped (3.8 ounces; 108g)
  • ¾ cup finely chopped dark chocolate (3.5 ounces; 100 g), see note
  • 1 tablespoon (15ml) heavy cream
  • Whipped cream or vanilla ice cream, for serving (optional)
