Corn Chowder with Ham and Potatoes
Ingredients

  • 1 cup of 35% cream

  • 4 cups of corn (about 4 to 5 ears), reserve the ears for the broth
  • 4 slices of chopped bacon
  • 1 large onion, diced into ¼ inch pieces (about 1 ½ cups)
  • 1 large carrot, diced into ¼ inch pieces, about 1 cup
  • 3 stalks celery, finely chopped, about 1 cup
  • 1 lb Yukon Gold potatoes, peeled and diced into ¼ inch pieces
  • 2 to 3 teaspoons sea salt or more, to taste
  • ¼ teaspoon freshly cracked black pepper
  • ¼ teaspoon cayenne pepper or more, to taste
  • 2 tablespoons chopped fresh chives, for garnish
