My mom would make this for my dad. He didn’t eat the oysters; just the broth! I’d eat the oysters. I have to make some non-dairy substitutions, but it’s still good. Today I’m making it for my husband for lunch. I wonder why I waited so long to make it.
Ingredients
  • ½ cup vegan butter
  • 1 cup minced celery
  • 3 tablespoons minced shallots
  • 1 quart half-and-half cream (I used coconut cream and milk)
  • 2 (12 ounce) containers fresh shucked oysters, undrained
  • 1 pinch cayenne pepper, or to taste
  • salt and ground black pepper to taste
