Ingredients
  • Noodles
  • 4 cups udon noodles (2 pkg)

  • Vegetables of choice (6 to 8) cups total
  • 2 cups broccoli florets
  • 2 cups mushrooms sliced +
  • 1 cup carrots match sticks
  • 1 cup bell pepper diced
  • 2 tablespoons cooking oil sesame oil for more flavor
  •  
  • Stir fry sauce
  • 1 teaspoon fresh ginger grated (loosely packed)
  • 2 teaspoons garlic grated (from 3 cloves)
  • ½ cup low-sodium vegetable broth or water
  • 4 tablespoons low-sodium soy sauce (or GF Tamari or Bragg's Liquid Aminos)
  • 2 tablespoons packed light brown sugar or other sweetener of choice
  • 1 tablespoons cornstarch
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional for a hint of spice)
