Pretty tasty and wholesome but you can’t taste the lamb :( might as well be beef. Mine didn’t brown as the pan was crowded by the onions, maybe the issue? I also used Barker’s Chipotle in place of harrisa which could also add to chili flavours. Very easy and tasty though. And you could hide any vege in here! Peas, corn, leeks, cabbage, etc
Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion finely diced
  • 1 pound ground lamb
  • 4 garlic cloves minced
  • 1 to 2 tablespoon harissa (Moroccan chile paste)
  • 1 tablespoon ground cumin
  • 2 teaspoons sea salt
  • One 28-ounce cans fire roasted diced tomatoes
  • One 15-ounce cans chickpeas rinsed and drained
  • 1 medium sweet potato peeled and cut into ½-inch cubes (about 2 cups)
  • 2 cups beef stock or water
  • 2 cups frozen or fresh chopped kale
  • 2 tablespoons lemon juice
  • Greek yogurt for serving
